Functional Responsibilities
Ensures proper levels of Pastry items are prepared based on forecasted needs and their prompt delivery to the designated outlet and schedule daily rosters.
Overlooking daily, weekly, monthly production schedules with shift leaders, supervisors (manual production and automated production lines).
Meeting monthly production targets.
Ensure sanitation and hygiene of kitchen area are being maintained and monitor the consistency and quality of all chocolate and pastry production.
Control of production cost and wastage.
Manage ordering of stock.
Support with daily, weekly and monthly inventories.
Optimize production function in all product categories.
Maintain inventory of raw material and packaging through liaising with purchasing department.
Maintaining (and enhancing) consistent quality of production.
Liaising with Technical Team to maintain machinery within production unit.
Develop policies and procedures to enhance and measure quality; continually updates written policies and procedures to reflect state-of-the-art techniques, equipment and terminology.
Managing the company fixed and current assets with high efficiency ( equipment’s , culinary items)
